Octopus with sweet potatoes. Christmas entree for the whole family

Every year the consumption of octopus is increased more at Christmas celebrations, and it is not surprising because it is a dish that we all like, older, and small and that is enjoyed as a family at snack time or as an entree at dinner or family food. That's why I want to show you a Very original and surprising recipe, the octopus with sweet potatoes that will surely serve as a Christmas entree for the whole family.

Unlike the traditional Galician octopus, which is served with potato mackerel after cooking the octopus legs in water, in this recipe we will use sweet potato mackerel and we are going to give a special touch to the octopus, which is something for Christmas.

  • 2 octopus legs, 2 sweet potatoes, olive oil, paprika de la Vera and some coriander or parsley leaves

How to make octopus with sweet potatoes for Christmas entree

This recipe that has a lot of influence from Portugal, is very Christmas thanks to sweet potatoes or sweet potatoes that combine beautifully with octopus and paprika. We start by putting the sweet potatoes to cook in a saucepan with water and a pinch of salt. When they have cooked 40 minutes, we peel and chop them, placing them on a plate and sprinkle with a little salt and a little spicy paprika from La Vera.

We can make the recipe starting from a raw octopus, which we have to cook or if you prefer, we can buy the cooked octopus or any of its legs and with them make the recipe. If you cook it at home, put a pot with water and give the octopus 3 or 4 minute dives (as if we were scalding it) and after putting it in and taking it out a few times, we let it cook for 45 minutes. (Time for an octopus of about 2 kilos)

If you buy the cooked octopus, that step saved us. Once the octopus is cooked, we will use two of the legs or tentacles, which we will go through the iron or heat in a pan without oil that we have very hot. This touch gives an impressive flavor to the recipe.

After we cut the octopus into slices with scissors , we distribute them between sweet potato mackerel and sprinkle everything with more paprika from La Vera, some chopped coriander leaves and a dash of good extra virgin olive oil in raw.
