Ingredients for 2 portions

  • 2 medium potatoes, 1/2 onion, 2 parsley branches, 1 egg, a can of natural or pickled tuna

How to make broth potatoes with tuna and egg for when they are bad

In a medium saucepan we cook the peeled and cut potatoes in irregular pieces with the half onion and the parsley branches, calculating approximately 600 ml of water. Cook over low heat without the water making many bubbles so that not too much water evaporates.

After 10 minutes, add the egg so that it is cooked using the boiling water or if we prefer we cook it separately. Let cook another 10 minutes until you check that the potatoes are very tender.

Remove the onion and parsley. Peel and chop the egg into small pieces that We return to the saucepan to make the broth a little fat and add color. We open a can of tuna, -it is richer if you use pickled but you can also use natural tuna- and drain it.

Add the tuna to the saucepan and turn off the heat. Stir and serve while the potatoes with tuna and egg are very hot. We also add the broth so that whoever wants to crush the potatoes with a fork.
