Roasted chicken dumplings. Recipe for the whole family

  • Remains of roasted chicken, 8 wafers of empanadilla, 2-3 tablespoons of cream or crème frâiche, 1 tablespoon of fried tomato, an egg to varnish

How to make roasted chicken dumplings

To make these dumplings, we will use pieces of a roast chicken that we have left over from the weekend. You just have to bone the breast or the left thigh and chop it into small pieces.

The filling of the empanadillas is done by mixing in a bowl the thick cream with a spoonful of fried tomato and bringing it to a boil by putting it for a minute and a half in the microwave. After add the chicken meat minced in taquitos and mix until compact. (When cooling thick)

When it is thick, we prepare the empanadillas filling with a stick of the mixture and closing them folding in the traditional way. Then the we varnish with beaten egg and we bake them for 10 minutes at 200º until the outside is browned, in the same way we did when preparing the chicken and corn breast patties with béchamel.

When they are ready to eat, you must wait a little to cool because the filling keeps enough heat and you would run the risk of anxious children or parents burning inside the dumplings.
