How sweet coal is made

These days abound in bakeries, apart from the delicious Roscón de Reyes, the sweet coal or charcoal that is traditionally given to children on Three Kings Day, even some horse rides already incorporate them among the candies that are thrown to the public and is found in the trays of many homes accompanying other Christmas sweets ... But how is this coal prepared?

It is a sugar-based treat, so it is important to thoroughly brush your teeth after eating that "bomb", and especially try it in a small amount.

Also, as Lola pointed out a few days ago, not to use coal as blackmail for children to behave as we wish, but as another gift if this tradition is followed.

The recipe is to get a kind of foam that, when cooled, looks like coal.

The first step is to prepare a cold glaze: luster sugar (to glaze) in 80% and water in 20%, until obtaining a homogeneous mass to which we will give a black color (using food coloring) to obtain its traditional appearance.

Next, a syrup is also prepared with common water and sugar, until it reaches the soft caramel point, which happens at approximately 128º C. When it is achieved, it is removed from the heat and the previously prepared glasa is added.

It must be removed in circles continuously and we will see that the sponge set rises in the form of foam. Finally it is allowed to cool and the sweet coal is ready to eat.
